  Stuffed Pork Loin

  • ½ pound bacon, chopped
  • 1 large onion diced
  • 2 cups sourdough bread broken into small pieces
  • 3 cloves garlic, chopped
  • 3 to 4 tablespoons fresh rosemary, chopped
  • Pepper to taste
  • 4 to 6 pound boneless pork loin


Method

Place bacon and onions in roasting pan and roast at 450 until meat has started to brown (get crispy on ends). Stir once or twice, roasting time 15 to 20 minutes. Place sourdough, garlic and rosemary in a bowl, pour onion and bacon over let it cool.
While that is cooling, ready the pork loin, insert knife through pork lengthwise stopping about ¼ inch from going all the way through. Pull the knife out. To make the hole larger, insert your index finger where the knife was and just keep pushing outwards to make the cavity bigger which allows it hold more stuffing, be careful not to rip the side of the pork loin. Mix the bacon and bread well. Next stuff as much as you can in the pork. Place the stuffed pork on the roasting pan, roast at 450 about 25 minutes lower heat to 325 cook 20 to 30 minutes longer. Let it rest about 15 minutes before slicing and serving. The original recipe comes from Chef Frank Stitt.
