Made with tropical fruit; mango, papaya, avocado, and macadamia nuts
Ingredients
  • 1/2 cup (4 ounces) butter
  • 1 cup sugar
  • 3 large eggs
  • 1/12 cups diced mango
  • 2 teaspoons orange juice
  • 1/2 cup grated coconut
  • 1/2 cup chopped macadamia nuts
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
Instructions
  1. Preheat the oven to 350°F.
  2. Grease and flour a loaf pan.
  3. In a bowl, cream the butter and sugar together.
  4. Add the eggs and mix well.
  5. Add the mango, orange juice, coconut and macadamia nuts and combine.
  6. In another bowl, sift together the four, baking soda, salt, and cinnamon.
  7. Add the dry ingredients to the mango mixture.
  8. Stir until the batter combines.
  9. Pour into the loaf pan and bake about 1 hour.
